Job Description:
A renowned hotel in Nairobi is seeking a creative and talented Executive Sous Chef through Summit Recruitment & Search. Key Responsibilities:
- Manage all daily culinary operations, ensuring efficiency and quality.
- Work closely with the Executive Chef to overcome challenges and celebrate wins.
- Lead daily briefings and provide clear guidance to the kitchen team.
- Set performance goals, monitor progress, and offer constructive feedback.
- Handle scheduling and labor management while maintaining industry standards.
- Control costs through effective planning, purchasing, and inventory control.
- Implement control systems for portion consistency and quality assurance.
- Regularly assess kitchen operations to maintain food safety and quality.
- Conduct one-on-one meetings and performance reviews for kitchen staff.
- Perform daily cleanliness inspections and follow up on necessary actions.
- Provide continuous training and development for culinary staff.
- Collaborate with the Food & Beverage team to improve services and customer satisfaction.
- Assist in creating promotional events and seasonal menus.
- Focus on improving food presentation, preparation, and overall guest experience.
- Chair monthly meetings to ensure open communication across the culinary team.
- Work with storekeepers to maintain inventory and product quality.
- Foster a positive work environment based on teamwork and respect.
- Lead by example with strong interpersonal and communication skills.
- Provide input during weekly chef meetings and ensure smooth operations for all dining services.
- Oversee VIP service, ensuring top-tier food quality and experience.
- Actively recruit new culinary talent to strengthen the team.
- Take on additional responsibilities as the Executive Chef assigns.
Qualifications:
- A minimum of 5 years in a senior culinary leadership role within a similar property.
- Diploma in Culinary Arts or a related field.
- Proven leadership skills, with a focus on team development and customer service.
- Current knowledge of culinary trends and a dedication to continuous improvement.
- Creativity, strong service skills, and the ability to lead a diverse team of professionals.
- Financial planning expertise with the ability to analyze trends and implement cost-saving strategies.
