Avocado & Egg Toast with Toasted Pine Nuts

This simple and satisfying toast is a perfect way to start your day or enjoy as a light lunch. The creamy avocado, perfectly cooked eggs, and crunchy pine nuts offer a delightful combination of textures and flavours. Whole wheat bread provides a hearty base, making this toast a wholesome and fulfilling meal.

Ingredients (serves 2):

  • 4 slices whole wheat bread
  • 1 avocado
  • 2 eggs
  • 15g pine nuts
  • Salt and pepper to taste

Instructions:

  1. Prepare the eggs: Place the eggs in a saucepan and cover with cold water. Bring the water to a boil, then reduce the heat and simmer for 8-10 minutes. Drain the hot water and rinse the eggs under cold water. Peel the eggs once they’re cool enough to handle.
  2. Toast the pine nuts: While the eggs are cooking, heat a dry frying pan over medium heat. Add the pine nuts and toast for 3-5 minutes, stirring frequently, until they are golden brown and fragrant. Watch carefully, as pine nuts can burn easily. Transfer the toasted pine nuts to a plate and set aside.
  3. Prepare the avocado: Halve the avocado, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until it reaches your desired consistency.
  4. Assemble the toast: Spread the mashed avocado evenly over the slices of bread. Halve the cooked eggs and place one half on each toast. Season with salt and pepper to taste. Sprinkle the toasted pine nuts over the top.
