Maize Porridge (Uji) Recipe

Experience the warm embrace of tradition with our Maize Porridge, fondly known as Uji in Kenya. This beloved dish has been a staple in many Kenyan households for generations, offering comfort and nourishment with every spoonful. Made from whole maize flour, this porridge is not only a delightful way to start your day but also an excellent source of energy and nutrition.

Ingredients

  • 236 g whole maize flour, white
  • 1513 g water
  • 330 g cow milk

Instructions

  1. Boil Water: Start by bringing 5 cups of water to a rolling boil in a large pot. The steam rising from the pot hints at the hearty meal to come.
  2. Prepare Maize Flour Mixture: In a separate bowl, blend the maize flour with 2 cups of cold water. This crucial step ensures a smooth, lump-free porridge, setting the stage for a perfect texture.
  3. Combine Mixtures: Gently pour the maize flour mixture into the boiling water, stirring constantly. Watch as the ingredients come together, thickening into a rich, velvety base.
  4. Cook Porridge: Allow the mixture to cook for about 3 minutes, letting the flavors meld and develop. Stir occasionally to maintain the smooth consistency.
  5. Add Milk: Incorporate the milk, adding a creamy richness that elevates the porridge. Cook for another 7 minutes, stirring frequently to achieve a perfectly blended, luxurious texture.
  6. Serve Hot: Once your uji is ready, ladle it into bowls and serve hot. The comforting aroma and satisfying warmth make it an ideal dish for any time of day.
