Scoop Size and Gastronorm Pan Volume Calculator

A scoop size and pan volume calculator helps you portion consistently. Pick a scoop number to see its volume in ml, enter a target portion to find the nearest scoop, or choose a Gastronorm pan and depth to see its nominal volume and footprint.

How to read your result

  • Scoop size: a scoop number is roughly how many level scoops fill one US quart (946 ml), so a number 8 scoop is about 118 ml.
  • Nearest scoop: enter a target portion in ml and read the closest scoop number.
  • Pan nominal volume: length times width times depth. Real capacity is lower because the walls slope and you never fill to the brim.
  • Scoops vary slightly by maker. Check yours with water, and weigh what a pan really holds.

Frequently asked questions

What does a scoop number mean?

It is the approximate number of level scoops that fill one US quart. A higher number means a smaller scoop.

Why is my pan smaller than the nominal volume?

Nominal volume is a calculation from outside dimensions. Sloping walls and the space you leave at the top reduce what the pan holds in practice.

Should I use scoops for every dish?

Use them where a fixed volume suits the food, such as rice, mash, batters and cookie dough. Use weight for anything dense or uneven.
