Allergen Matrix: Printable Dish-by-Allergen Chart
An allergen matrix is a grid that lists each dish against the allergens it may contain, so your team can answer a guest accurately. You fill it in from your own recipes and labels.
What is inside
- Rows for your dishes and columns for gluten, milk, eggs, fish, shellfish, peanuts, tree nuts, soy and sesame
- An Other column for any further allergen you track
- Lines for the kitchen, the menu version or date, and who completed it
- A reminder to check labels on every bought-in ingredient
It suits any kitchen that serves guests. The grid is blank: adapt the allergen list to what your local authority or customers expect, and complete it from your real recipes and supplier labels.

Frequently asked questions
How often should I update it?
Whenever a recipe, an ingredient or a supplier changes, and whenever the menu changes. Write the date on every version.
Does a matrix replace talking to the guest?
No. The matrix supports your team, but guests with allergies should always be able to speak to someone who can check the recipe and the kitchen.
