Waste, Transfer and Credit Log: Excel Workbook with Totals

This is the Excel version of the waste, transfer and credit log. It calculates each line’s value and adds a summary by type, so you can see what waste, transfers and credits cost over a period.

What is inside

  • A Log sheet with date, type, item, unit, quantity, unit cost, value, reason, who recorded it and notes
  • Room for around 300 entries
  • A Summary sheet with the number of entries and total value by type It is an Excel file: yellow cells with blue text are inputs, and the example rows are there to delete.

It suits kitchens that want totals without adding them up by hand. A printable PDF version is also available.

Frequently asked questions

PDF or Excel: which should I use?

Use the PDF for a sheet at the bin or the back door, and the Excel for totals. Some kitchens write on paper and enter the lines in Excel at the end of the week.

Can I add more reasons or types?

Yes, but keep them few. Too many categories make the log slow to fill in.

How to use this form
  1. Open the workbook and delete the example row.
  2. Enter each item as it is wasted, transferred or credited.
  3. Choose the type and the reason for each line.
  4. Check the value column, which is calculated for you.
  5. Read the Summary sheet for the total by type.
  6. Review it weekly and compare it with your food cost variance.
